Pineapple Shrimp Salad

Ingredients
  1. 1 lb. shrimp, peeled & deveined
  2. 1 can (8 oz.) Pineapple tidbits, drained
  3. 1/2 cup light mayonnaise
  4. 1/2 cup sliced almonds, toasted
  5. 1/3 cup red onion, chopped
  6. 1/4 tsp. nutmeg
Instructions
  1. Steam shrimp & chill with ice for 15 - 20 minutes
  2. If shrimp are large, chop slightly
  3. Mix shrimp and remaining ingredients in medium bowl.
  4. Cover & refrigerate for at least 30 minutes.
Notes
  1. Serve cold on a bed of lettuce
